Plain Puppodums

Enjoy these delicious puppodums from Madras, made to a traditional recipe to bring you a tasty accompaniment to serve with an Indian meal. Or simply as a tasty snack.

Serves 4

Black Chickpea Gram Flour, Water. Sea Salt, Calcium Oxide, Rice Flour, Sunflower Oil

Deep Fry - From Ambient

• Heat 5cm oil in large deep frying pan or wok until very hot (392°F / 200°C). (To test: drop a small piece of Puppodum into the oil, if it starts bubbling and expands immediately the oil is hot enough).
• Deep fry one or two at a time, holding under the oil with a metal spatula. The Puppodums will expand in 2-3 seconds.
• Quickly turn the Puppodum over, shake off excess oil and remove.
• For best results drain upright on kitchen paper. The Puppodums will become crisp on cooling.
